Great vineyards and great character

 
There are references to it even in Gallo-Roman times, when it was already greatly appreciated, and there are many other mentions of it over the centuries. To cite but one : it was chosen by Tsar Peter the Great of Russia to be the Mass wine of the Russian Orthodox Church. Known as the Black Wine of Cahors in mediaeval times, because of its intense, deep colour, this name has been revived recently as part of a marketing campaign. The main grape variety is Malbec, wich must constitute 70% of a grower's vines; then he can use Tannat and Merlot as he chooses for the rest. 100% Malbec wines are also allowed.
Viticulteur
Although many growers produce white and rosé, they cannot have the Cahors appellation: that is solely for the reds. The majority of the AOC vineyards are to the west of Cahors, in the Lot Valley or on the limestone plateau above. However, the Coteaux du Quercy VDQS wines which are also made in the Lot, in the Quercy Blanc, cover the full range of red, rosé, dry and sweet white.
They tend to be fresh, fruity, easy-drinking wines, excellent with summer barbecues or for an aperitif. There is also a small wine-producing area in the north-east of the Lot, Coteaux de Glanes, and recently, some growers have replanted the vineyards around Rocamadour, producing some very pleasant wine.

Cherry soup with Cahors wine




Preparation : 20 mins
For 8 personnes

Ingredients :
1kg cherries
1 bottle of Cahors wine
250 gms brown sugar
4 vanilla pods
2 juniper berries
1 clove
2 teaspoons of ground ginger (10 gms)
2 cinnamon sticks
1 piece orange peel
1 piece lemon peel

 

Preparation
Bring the Cahors wine to the boil with the sugar and flavourings.
Cook for two or three minutes.
Add the cherries. Cover. Turn off heat.

Allow to macerate until cool.

Our suggestion : enjoy this soup with almond or marzipan ice cream. spring.
