A small raw-milk goat's cheese

 

Rocamadour AOC, a small raw-milk goat's cheese made on the causses of Quercy since the 15th century, needs no introduction. If it bears the name of one of France's most precipitous villages, it can itself precipitate strong feelings: of irrepressible greed. Before yielding to temptation, let's get its exact measure: 6 cm in diameter, 1.5 cm thick, four lines across the top, and a soft, velvety ivory-coloured skin. This cheese simply melts in the mouth, giving off aromas of cream and herbs, set off by a hint of salt and butter.

 

Fromage Rocamadour
These flavours are the result of an intimate alliance between the soil, men and methods which satisfy the highest requirements. The producers perpetuate gestures inherited from family know-how and even if the most modern techniques are used nowadays, the stock-breeder's sensitivity and touch remain the determining factors. Add to this the quality of stock raised in the open air which means that the wild flavour of the causse – juniper, flowers, herbs – perfumes the milk.

Rocamadour summer fritot

 
Preparation : 30 mins
For 4 personnes

Ingredients
4 rocamadour cheese
1 aubergine
2 tomatoes
olive oil
fresh herbs

Preparation
Cut the aubergine and tomatoes into 8 mm thick slices, salt them and leave 5 mins. to remove excess water, rinse and dry on kitchen paper.
Fry the vegetable slices in a little olive oil over a high heat.
Assemble the ingredients in an oven dish: a well-browned slice of aubergine, a slice of tomato, a Rocamadour, a slice of tomato and one of aubergine.
Bake for 8 mins at 200°.
Decorate with the herbs.
Serve with a little salad. summer

Rocamadour cheese festival :

Whit sunday

The famous Rocamadour cabécou invites its AOC cousins from all over the south to a party, with a "guest star" cheese which dictates the theme that runs through all the events and meals. Fifteen or so "départements" are represented, about forty cheese-makers attend and there are a dozen regional stands: tasting is free, you buy if you wish, and everyone has a great day in any case.
