- This route is superb in autumnn when the saffron fields are in flower, and you get superb views of the Lot Valley from the heights above Cajarc. The Revolution marked the decline of saffron in Quercy, after 400 years of intensive production. A few bulbs had colonised some gardens, however, and this is how it was possible about ten years ago to revive the "crocus sativus", the pride of Cajarc. The spice which comes from the pistils of this lovely flower is the most expensive in the world. Its flowering in early October decks the fields in mauve, and lasts about three weeks ; a saffron flower lives for 48 hrs maximum. After picking, the pistil must be separated from the flower without delay.
