The landscape around Espe´daillac has been fashioned largely by sheep. The Caussenarde breed, known as "sheep with sunglasses", is particularly characteristic of this area. The landscape around Espe´daillac has been fashioned largely by sheep. The Caussenarde breed, known as "sheep with sunglasses", is particularly characteristic of this area. The landscapes of the Causse plateau are inherited in large part from 19th C. farming practices. At that time, the Quercy Causses reached the high point of their demographic and economic development, dominated by a tradition of pastoralism and cereal-growing. Grape vines were also omnipresent. The village of Espe´daillac is a perfect example of the layout of a Causse village, with houses of a remarkable architectural quality, a caussanel (village green) and a network of dry stone walls extending all around it.
