- From the valley to the limestone hills, this walk will take you along paths in unspoiled countryside. You'll see traditional houses, pigeon-towers and bread ovens in the hamlets of La Croze, Lantis and Le Mas Teulat. The countryfolk of Quercy were past masters in the art of using wild plants in their cooking. From May to autumn, young shoots of goosefoot were cooked like spinach. Nettles went into soups, gratin dishes and omelettes. Dandelion and plantain leaves made delicious salads, whilst oregano was used to make herb tea. Nowadays biologists are rediscovering the virtues of this "foraging" based cuisine, rich in Omega 3.
